Brown rice risotto!
I may be late on the uptake at the possibility of brown rice risotto...but I made it last night, and it came out AMAZING. I also added shrimp and asparagus. The only difference was the increased cooking and liquid. I used Lundberg short grain brown rice (I found it in the Organic/Natural section of Wegmans) and I can say I am proud of myself :) I love brown rice, so the texture was just a bit firmer than regular risotto, but it was just as creamy and delicious!
