A Night Time Project - What to Bake?

Amazing but true...I finally have a free night and I need help with ideas of baking something relatively simple yet incredibly delicious. I thought about Irish Soda Bread but don't have the buttermilk and banana bread has been made too many times. Any ideas?....Any one?....Any one?....
