Pickled Beets Suggestions please!

I adore my gramas pickled beets.
I love them straight up, or in my potato salad.

I was craving this relish/salad my papa used to make with diced pickled beets, diced pickled herring, diced gerkens, fresh dill, diced red onion and fresh cracked pepper
....and I realized how versatile pickled beets can be.

My question for you Serious Eaters:
What is your favourite Pickled Beet application?
Care to share some secrets?

How do I love my pickled beets? When I'm pregnant, straight out of the jar, standing in front of the open fridge in the middle of the night, wearing my fuzzy slippers -- the stain on my fingers telling the tale of my night foragings in the morning.

I've had them in burgers, mighty tasty!

I've been eating beets with feta cheese, watermelon, toasted pumpkin seeds, and a drizzle of honey.

@chalmers - reallly? in the "ground meat mix" or on top? sounds great!

Straight out of the jar, or on a green salad. ranch dressing preferable.

@hungry: on top! like instead of pickles (or with!) yum yum yum. i love beets.

I just like to eat them as is best.

I like to eat them right from the jar. I also like them laid on a plate, alternated with slices of hardboiled eggs, drizzled with a dressing made from mayo thinned out with some of the pickled beet juice. A cashier at my grocery store let me in on this when she saw I was purchasing pickled beets.
Yes, I know it sounds weird, but it is delicious, and very pretty.

@CJ McD: I can imagine how good tht would taste! Like: on crackers, sandwich or salad. Definitely a must for me now. Camembert maybe? Or too rich?
