Here's a recipe for my FAVOURITE way to eat oysters (if not raw) from epicurious.
Pernod and terragon are key.
good luck!

For the easiest & tastiest meal, just put the entire oyster on a grill. Wait till they open from the steam and take off the top shell. Sprinkle sharp chedder cheese and raw onions on top. Let the cheese melt and serve. I had a ton of these in Puget Sound and it is delicious.

My grandma always makes a oyster and corn casserole for holidays. I love it! This recipe is similar to the one my grandma makes. She adds more crushed crackers on the top with a little butter and uses smoked oysters. Yum!

Shuck them. Pop them in a bamboo steamer in the half shell, with some grated ginger, a dash of soy sauce, a drop of sesame oil, really thinly sliced spring onions. Not too much of any of the toppings though. Steam for about 3 minutes until just cooked then slurp them - whatever you do, don't let any of the juices out of the shells unless it is into your mouth.
