Marsala Wine
What are your favorite uses for Marsala wine? I used around 2/3 cup (making Zabaglione Gelato, mmmm) and would like to find a good use for it. Does anyone have a good recipe for chicken marsala, or other good uses?
Also, how long will it be good for? I am going away Wed-Sun and don't think I will have time to use it up before then.

If it's a wine that I'm using for cooking, I don't worry so much about subtle nuances that get lost after it's been opened for a while. I use it until it's gone. Seriously, it's not going to go bad in a horrible way, and it takes more than just being open for it to turn to vinegar. Even when you're trying to make vinegar, it takes a looooong time.
I'm pretty haphazard about cooking with wines. What I have, I use. The only thing I shy away from is using a red wine if I don't think the color will work with the dish. Otherwise, I taste what I'm making, sample the wine, and if they're compatible, I'm good to go.

Just cap it and put it in the fridge. It'll be fine. I don't have a recipe for chicken marsala I just wing it. You can too, live dangerously :)

I don't care for it, but had this for dessert at an Italian restaurant ~20 years ago...fruits soaked in marsala. I didn't know what marsala was and figured how could I go wrong with fruits...

It was my jumping off point last year. I also made it with pork and then veal. DELICIOUS.
Also, as Cassaendra pointed out, it's wonderful using it to macerate berries or fruit. I did it with strawberries last year and then topped with mascarpone. Awesome.
Also, I think it will keep until you get back. I've kept mine longer and it was fine. Just use it shortly upon return I guess.

the wine will definitely keep that long. giada has a mushroom ragu recipe on the food network site that calls for marsala and it's amazing and super simple to throw together.

Marsala compliments duck, pork and chicken dishes. It's excellent with berries and peaches too.

Two mounths ago, I went to Sicily and I visited the "Cantine Florio", the most famous producers of Marsala. The guide told us that the wine we usually buy is the least valuable and for this reason is perfect for cooking. Here, in Italy, we use it with meat, expecially veal, and one of the most popular dish are the "scaloppine al Marsala": take thin slice of meat, batter them with flour and fried in butter or olive oil and then cover with a glass of dry Marsala. Let it boil off, salt and serve immediatly, filled with their sauce.

Marsala is a fortified wine so will keep for a long period of time. I believe I have had my current bottle in the liquor cabinet for 6 months.

A quickie use is to saute off a bunch of sliced fresh cremini and splash in some marsala. Continue sauteing until the wine is almost evaporated. It's really concentrated into the mushrooms.

My version of Chicken Marsala:
Salt and pepper boneless, skinless chicken breasts. Dredge in flour.
Heat large skillet and add olive oil and a pat or two of butter. When this butter is melt, fry up chicken. Brown on both sides, remove and keep warm. Add marsala to the pan to deglaze, scrapping up the brown bits. Add chicken stock or broth. Simmer and reduce the sauce to make it slightly syrupy. Adjust seasonings with s/p. Finish sauce with a pat of butter. Return chicken to sauce and simmer until heated through, ~1min. That's about it. You could probably add some sauteed mushrooms, but some people just don't care for the fungus.
