Israeli pita bread
Does anyone have a tried and true recipe for pita bread? I've tried a bunch of different recipes, but the results, while decent in their own right, aren't exactly what I'm looking for. I'm talking about the fluffy, thick kind you find at real, good falafel/hummus places in NYC like Hummus Place and Taim.
Please help!

Making good pita bread is a balance. To get them to puff, you need to roll out the dough thinly and bake at a high temperature. Perhaps you can try a thicker dough and a hotter oven?
(btw, when i first made my pitas and watched them puff to near spheres, i squealed! My roommate came running in to see them. It was an exciting night)
