How can I salvage these fall-apart meatballs?
Why do I try to improvise?
I made a few missteps in an attempt to make meatballs, most notably adding too much egg and bread crumb. Now they are little more than (flavorful!) loose ground beef, seasoned with tomato, dill, onion, and lemon juice.
I've considered throwing the lot into that great catch-all, Shepherd's Pie, but are there other options for a mountain of vaguely Russian-tasting hamburger?

My Italian ancestors would say - take the lot, toss with tomotes, onions, whatever herbs float your boat, add pasta (ok so if Russian - maybe potatoes?) and eat!

Sounds like a perfect stuffing. Use it to stuff mushrooms, peppers, tomatoes, squash, onions...whatever floats your boat.

I often add loose hamburg to my spaghetti sauce. Better yet, lasagna would be a perfect place to disguise that they were not originally cohesive meatballs.

Healthy: Spaghetti squash or stuffed/shredded/sliced zucchini
Not so healthy: Sloppy Joes, hot hoagies on hollowed out rolls, spaghetti bolognese, on buttered bow-tie pasta, or cold meatloaf/meatball style sandwiches

I would stuff a veggie with them or throw them in a stroganoff type sauce and serve over egg noodles.

Casserole with wide needles and a little sour cream
or toast/grill some crusty rolls and stuff with meat mixture.
Stuff cabbage leaves and simmer in tomato sauce.
I like the stuffed pepper idea too!

Roll into phyllo dough with some farmer or feta cheese for little hand held pockets of deliciousness.
Stir in some cooked and drained spinach, feta, maybe even some cooked rice and top with phyllo to make a Balkan style meat pie. Especially with the dill. Yum.

Dill and tomato sauce? Lemon juice? Try it the old fashioned way before you go off the reservation. Maybe go sloppy joes with the dilly stuff you made this time.

yeah it's been said but i would totally stuff some tomatoes/peppers, top with cheese and bake.

I agree with hungrychristel. I would mix the meat with some cooked rice, shredded cheese, and hot sauce. Then stuff them into red/green bell peppers w/ the tops cut off and bake until the peppers are slightly wilted but are still tender.
