Happy Turkey "Pie" or Ala King
In 1983, Oak Park, Illinois, a health restaurant around the corner sold "Happy Turkey Pie". It was delicious, and they provided me with the recipe. There was a saute process with onions, mushrooms, maybe celery. Among spices were Parsley, Sage, Rosemary and Thyme. The mushroom sauce utilized whole wheat pastry flour, and to the mix was added tofu. This was all cooked together in a huge pan, (I would make enough for one month, freezing three one week batches, because it took so much work to slice things.)
This was all to be put in a whole wheat pie crust. Given that the rolling was something I was poorly trained in, and given that I felt the crust, while good, was not so healthy, I simplified the process and put the happy pie filling over brown rice, (what I term ala king.)
My question is what was that recipe? I cannot find the recipe. I kept it for years, and somewhere along the way it got lost. I have googled and cannot find it.
Someone must have lived in Oak Park in 1983 who ate it, or worked at that little restaurant.
Once found, it is highly recommended!
