Gumbo sausage in Chicago?
So I'm going to make gumbo this weekend, and was wondering if anyone had recommendations for where to find sausage for such a thing--spicy, and not too sweet. Once upon a time, Dave Duerson hot links were the perfect thing, and easy to find anywhere, but they don't seem to exist anymore. And the andouille stocked by Treasure Island and Whole Foods just doesn't work well at all--it ends up really tough, so I'm guessing it's just not fatty enough to stand up to long simmering.
I'm thinking Paulina Market; any other suggestions?

Not sure where in Chicago you could buy andouille but the two brands I would recommend would be either Savoie's or Richards. Both are Louisiana made and quite delicious. I live in New Orleans and use both on a regular basis. Another product you might want to look into getting as well is Tasso. I put that in my gumbo as well.

I know this is a bit late, but you could have also tried Merguez for a nice kick, or Chorizo... or perhaps linguica.... all fine spicy sausages. I prefer the smokey heat of Andouille or Tasso, but the aforementioned would also work if you have no Andouille availability.

Cool, thanks a bunch for the recommendations--I'll _definitely_ have to search for Tasso next time I make gumbo. And those sausage suggestions are great; I'll keep my eyes peeled.
