chopt'd, toss'd, stress'd!!!
when i go to get lunch in nyc and want a salad i usually try to find a place that will make a salad with anything i want in it and then chop and toss it for me. even though i am good at making salads when im home, i get so overwhelmed by all of the options that i end up with bad combinations. i need some good go-to's...help!!

I don't know if you like tuna, but a classic nicoise salad is a nice combo for a chopped salad. With boiled red potatoes, green beans, flaked tuna, olives, red onion, tomatoes, and lettuce in a light mustard vinaigrette. I also like dried tart cherries, wheat berries, walnuts, and salmon over romaine with a lemony vinaigrette, had something similar at panera bread a few years ago and now make it at home

tonite we had a nice salad from the garden with lettuce, tomatoes, cukes, avo's, fresh mint and red onion - then i put in some local sheep's milk feta (wowwy, ka-zowwy) and a few sauteed shrimp.... just tossed it with some extra virgin olive oil and a pinch of sea salt. it was so good. simple, fresh and delicious.

baby spinach or other tender young greens (mache is nice, spring mix works in a snap), sliced strawberries, goat cheese, sliced almonds or candied pecans, toss with a fruit vinaigrette if available, otherwise balsamic vinaigrette would work.
chopped romaine lettuce, diced cukes, tomato, avocado, chopped egg, bacon, diced chicken, crumbled blue cheese, toss with a dijon sherry vinaigrette for Cobb Salad. I also add dried cranberries (Craisins) for a little sweetness.
I usually just shoot for a balance of contrasting flavors and textures. Sweet, tart, crisp, tender, creamy, crunchy.

well, here's what i have assembled at salad bars in the recent past:
turkey, pear, blue cheese, candied pecans or walnuts.
egg, bacon, red onion, mushroom.
spinach, strawberries, red onion, feta, poppyseed dressing.
chicken, cucumber, feta, black olives, red onion.
beets, cucumber, mushrooms, goat cheese, sunflower seeds.
(i like red onions!)

It can totally get stressful, I know. I've seen the girls I work with freak out on the line and order the weirdest combos. I go in with a plan and stick to it. This is my favorite, from Guy & Gallard:
romaine, chickpeas, mixed red and green peppers, celery, red onion, green olives, tossed with balsamic vinegar
I think I'll be having it today... again, since I also had it yesterday and almost every day last week.

Guy & Gallard was my favorite place to go for a quick lunch in NYC...I like romaine and spinach mix, with corn, avocado, tomato, goat cheese, grilled chicken (or salmon, depending on where you go) with a champagne vinaigrette, or some kind of citrus vinaigrette.
Just went to Chop't for lunch today and it is definitely not as good as the NYC tell-them-and-they-mix-it-for-you salad places.

My favorite from Tossed is the Cobb Salad, but with the blue cheese on the side because I think they add too much for my taste. Also, love the honey dijon dressing.

Cheaply, pleasureably, I often fall back on thinly Mandoline sliced red onion rinced in cold water. Then added to some tuna and capers (pantry staples) and dressed in aioli or a fresh lemon and EVOO dressing. So simple and satisfying with toasted pita pieces and a chilled glass of fresh white wine.

Oh also my family's fave: grated carrots, raisins (any rdied fruit), walnuts (any preferred nuts) in vinegartee or even just mayo. It's great espescially left-over the next day. I often add segements of orange. All stuff usually found in a kitchen - easy.
