Chili Garlic Sauce

A friend of mine got me a jar of something called, "Chili Garlic Sauce" from a local Asian market and though it's tasty, I have no idea what to do with it.

Is anyone familiar with this stuff and if so, what are your favorite applications for it?

My favorite pot sticker dipping sauce (I usually make a smaller amount than this and just add the last 2 ingredients to taste.)

1cup soy sauce
3/4 cup maple syrup (can use brown sugar to taste, instead)
1-2 tsp chili garlic sauce
1/2 tsp sesame oil

cook some shrimp and toss with some chili sauce and a little tomato paste thin with a little water.

Add a small spoonful to stir fries.

I like to add some to my mac & cheese.

i bet it would be good on eggs (like scrambled or in an omelet - i've been putting cholula on mine recently and that's a garlicky/spicy sauce). i would use some in stir fries, and maybe mix a spoonful into broths/noodle bowls.

When I was eating egg muffins every day for months on end (ok, I totally made them more strata like), I was putting whole wheat bread cubes, kale, and ground turkey that I cooked with chili garlic sauce. SO good.

I mix it with fermented black bean paste and toss it in stir-fried zucchini and tofu, which I eat over rice. Yum.

Oh - sorry to double post, but I just remembered that my cousin also bastes his rumaki in it (well, that or sriracha, whatever's on hand). It's fantastic.

uhh... i dont know what happened to my last comment. I was just going to say that I love chili garlic sauce. I have put it in almost everything, since the flavors in it dont really.. clash too much with other flavors. I hope that makes sense to you...

Head on over to this recent thread on Sambal Oelek (which means 'Ground Chili Paste', similar to what you have, just without the garlic).

Just like Sambal Oelek, you can use it anywhere you want to add some spicy kick: by itself out of the jar as a condiment, or mix it into sauces or dips, or include it as an ingredient in stir-fry dishes, etc.

I marinate chicken with it (and a few other things, of course!) -- I take a pound of boneless, skinless chicken breasts, sliced thin, put them in a ziplock bag then add (measurements are rough -- sometimes I add a little more or less):

1/4 cup soy sauce
1 lime, juiced
1 teaspoon sugar
1 tablespoon chili garlic sauce
1 teaspoon fish sauce
1 tablespoon minced ginger
1 clove garlic, minced
1/2 cup fresh cilantro, minced

Pour it all in, zip the bag closed and mush it around until all the chicken is coated. Marinate for at least 1/2 hour, then pan cook or grill. Trust me, it's good. The flavors really soak into the chicken and make it really tangy.

sambal O! freakin' delicious. if you enjoy heat you will become hooked on this flavor - it's not only the spice but a really tasty sauce. love how chunky it is. it's GREAT on dumplings, great as a marinade add-in, mixed with mayo for a dippin' sauce (great for sushi, sandwiches, anything really). never tried this but i'm sure it would be terrific a little more thinned-out and vinegary, maybe on some pulled pork. it's tasty as hell put it on everything!

I hear that using it with peanut butter, shallots, rice vinegar and sesame oil makes a killer peanut sauce

That marinade sounds fantastic!

I mostly use it as a condiment, adding it to finished dishes at the table: stir fries, pizza, spaghetti, eggs, nachos, burgers, grilled cheese, mixed with ketchup on fries...
