Brown rice risotto!

I may be late on the uptake at the possibility of brown rice risotto...but I made it last night, and it came out AMAZING. I also added shrimp and asparagus. The only difference was the increased cooking and liquid. I used Lundberg short grain brown rice (I found it in the Organic/Natural section of Wegmans) and I can say I am proud of myself :) I love brown rice, so the texture was just a bit firmer than regular risotto, but it was just as creamy and delicious!

I thought I was the only one who'd discovered this! Either short grain brown rice has gotten better in recent years, or my tastes have changed. I've become a brown rice person now, which was never true before.

I love brown rice, and I love brown rice risotto made with short-grain brown rice...but it sure does take forever to cook.

i love it too.... i usually make this in the fall and then serve it in a roasted winter squash.... love brown rice. and lundberg is really good these days.

Thanks for letting me in on this. I'd thought about it, but never did.

There are some recipes I think might be interesting but that I don't want to try because of the cost, time involved, or whatever. Has anyone tried oven or crockpot risotto?

the only rice I ever buy anymore is brown rice and I prefer short grain to long always as well. Brown rice rissotto is a standby at my house. I buy a big bag of rice at my local asian food mart and its perfect! why do people always think you have to buy something called rissotto rice?

You're on to it too! I like fresh asparagus also, loading it with fresh veggies, then stirring in some good grated parmesan right at the end. The time is well worth it.

What does everyone use as the liquid? I'm a fan of Kitchen Basics veg. stock (umm, broth).

I used Pacific Foods Low Sodium Veggie broth...and a glass of white wine...and a few more splashes :)
