Brown bananas

How is it that when I leave for work in the morning I take a perfectly yellow banana with me in my bag and by the time I get to work (40 min) it is brown all over? Does this happen to anyone else?

Yes. Bananas brown extremely quickly when put in a bag or container even for a short period of time. Carry in your hand to avoid this. Don't know the chemical/scientific process/reason it happens (I'm sure one of our fellow foodies will enlighten us) but I know that it happens.

I concurr with juliebugsmama. I learned the hard way never to refrigerate them either


....you can still make banana walnut muffins with them when they're brown!

all fruits produce a gas called ethylene, which helps ripening. so when you put a banana in a bag or a container it speeds up the ripening process.
I think that advertised "green bag" that keeps produce fresh longer may have something to do with absorbing ethylene.

Did it by any chance get cold along the way? Refrigerator temperatures will cause otherwise OK bananas to go brown, but it's just cosmetic. The lower temp actually retards ripening.

freeze them! this has been my dessert of choice for the summer. just peel them, wrap them in some foil, stick in the freezer, and soon you'll have a delicious, ice cream-like healthy snack. i like to eat them frozen with some nutella... yum!! think i'll go have one right now.

If they are only getting brown during your commute, (i.e. the ones at home are still yellow at the end of the day), they are probably getting bruised in your bag.

Happens to me all the time. I always mean to take it out of my purse sooner than I do...Try carrying it or leaving it on the seat in your car if possible?

When you get home from the supermarket take apart each and every banana and put them on the counter or in a bowl slightly apart. You will lose less bananas since they will ripen slower.
