Blue Fish
Just picked up a couple fillets of fresh Atlantic blue fish from the market today. I figured I would try something new with it. Any suggestions for a recipe?

Random, I just had bluefish last night for dinner. I cooked off some sliced garlic in olive oil, seared the fish in the infused oil then topped with a piperade to finish.

I just made some last weekend. I baked individual servings in parchment with slices of tomato, fresh basil leaves, a splash of white wine and a tiny pat of butter. I think I baked them at 400 for 20 minutes but I could be wrong.
I impressed my future inlaws with it so it must have come out pretty good.

Mustard is a great match for bluefish - I like to brush fillets with Dijon, sprinkle on thyme or other herb and grill.
