Alcohol based cakes
My little brother is turning 21 this weekend, and I thought it would be appropriate to make a cake with some kind of alcohol in it. I was going to do the Irish Cake Bomb (Guinness chocolate cake with Bailey's icing), but I found out today he doesn't like Guinness. So now I'm trying to think of a new idea. Maybe a Kahlua cake? Or a rum cake made with Malibu? Something else with Bailey's? Or maybe Amaretto? What kind of recipes have you guys had good luck with? Thanks in advance!

I make the Bacardi Rum cake for gifts at Christmas ... and for us. There are two common recipes, one that uses cake mix and another that's a scratch recipe.
You could take that basic recipe and use other types of alcohol, but the rum is pretty good. I'm not a fan of spiced rum, but if you like it, that would work, too. There are some recipes that ask for that. But they're all pretty similar.

I've done a mudslide cake - Bailey's cake, Kahlua ganache frosting. It was delicious.

When I was in high school, my mom used to always buy these awesome supermoist and heavy on the alcohol cakes for my birthday parties made with Remy Martin and Disaronno amaretto (separately). I recall she also bought rum cakes, as well as bourbon laden cakes.
So, I think anything goes and I'd imagine the recipe would be the same...?

Rum cakes are fabulous. A bonus is that they last several days because the alcohol keeps them moist and fresh. Check out Warren Brown's book CakeLove for a mojito pound cake that is pretty spectacular. I found a link to this blog: http://erincooks.com/cakelove-mojito-pound-cake/ that has the recipe for you. His recipes tend to be a bit fussy, but I always find they turn out great.

I made Mark Bittman's apple brandy cake last year and it was fantastic. It was this amazingly delicious apple cake that was then soaked in apple brandy (I used a little amaretto too).

Just as a heads up, the guiness in the car bomb cakes is baked in, and you can't really taste it. The Jamison ganache however, was quite potent...

A few years ago at Easter, I make a babka that I soaked in sweetened brandy and served with a butter, sugar and cognac sauce. Very boozy, very tasty.

Ina makes a baba au rhum that looks killer but that might be a little too mature for a 21 year old's birthday. My sis-in-law makes a good Guinness cake from Nigella. It doesn't take like beer but it certainly tastes like chocolate.... it's quite yummy

Midori Melon Cake
1 (18 1/4 ounce) box yellow cake mix
1 (3 1/2 ounce) package instant pistachio pudding mix
4 eggs
1/2 cup plain yogurt
1/2 cup vegetable oil
3/4 cup Midori melon liqueur
1/2 teaspoon coconut flavoring
frosting
2 cups powdered sugar
1/4 cup Midori melon liqueur
1/4 cup cream cheese
2 tablespoons butter
1/2 teaspoon coconut flavoring
Preheat oven to 350 degrees F.
In bowl, combine all ingredients except frosting; beat 4 minutes. Pour into well-greased Bundt pan. Bake 35 to 45 minutes. Remove from oven and cool in pan about 15 minutes. Remove from pan, prepare frosting and frost cake while still warm. Cool completely before serving.
Frosting.
In bowl, mix and beat all ingredients together at high speed until smooth and spreadable. Frost cake while still warm.
Every time I make this cake people go nuts. It is ridiculously good. Moist and very flavorful.
Ahh.... 21 to be young again.

Black forest cake, sprinkling each Baked layer with Kirshwasser. Baking the booze blows off the alcohol, so why waste it in the batter. Oh, and use Polish brandied cherries between the layers for added kick.

@veggieout - that skit on cake is one of my favorites!
I always remember this cake I had at my high school graduation: it was an Italian sponge cake (or rum cake maybe) that had been soaked in some kind of liqueur, and then layered with whipped cream and strawberries and peaches. It was insane. I don't have a recipe but I think you could improvise. I just googled it and here is a recipe that seems close to what I had http://www.newitalianrecipes.com/zuppa-inglese.html

@annabananas, I've made that cake before, so I do know you don't taste it much, but thanks for the reminder, because I guess that does make it still a possibility! And the frosting is sooo good!
Not sure if it needs to be a possibility still though. These all sound delicious! I'm really liking the idea of that Mudslide cake...and the Jack cake...and the Midori cake...and...yeah...wow, lots of choices. Thanks guys!
Ah, and just to clarify, the reason I was wasting the booze in the batter is because not everyone in my family drinks, so I figured that alcohol burns off (or at least most of it would, I would think), and I could do half normal frosting and half boozy frosting so everyone could partake.

I used to think the alcohol burned off, but Ted Allen on his Food Detectives show demonstrated that very little actually does.

Yep, as I recall, he did cornbread with bourbon and pasta sauce with wine, along with some other foods.

If he likes mint, maybe do some kind of grasshopper inspired mouse/cheesecake.
Or a tiramisu-type cake with kahlua brushed onto the cake layers.
I don't remember my 21st birthday because I have a bad memory.
