A Night Time Project - What to Bake?

Amazing but true...I finally have a free night and I need help with ideas of baking something relatively simple yet incredibly delicious. I thought about Irish Soda Bread but don't have the buttermilk and banana bread has been made too many times. Any ideas?....Any one?....Any one?....

Morning Glory muffins. Pumkin Bread. Shortbread cookies are about as easy as it gets.

Good for you! I'm going to live vicariously and suggest all the things I've wanted to bake forever...since it's PM baking, I'm going to assume that there are certain things you're rather not do (like grind 1/2 pound of almonds for macarons) and also that grocery trips may not be desirable. Maybe honey cake or ginger cake (there's a good recipe for the latter on chow.com for the ginger cake from Maxie's in Ithaca, which was definitely delish).

Cupcakes and brownies are always fun - maybe smore's cupcakes, if you have marshmallows? Hmm, that's another project that might be fun - homemade marshmallows.

Also, fruit curd-based tart or pie, if you have citrus lying around...Let us know how it goes!

I second shortbread.

Either coc. chip cookies or brownies hot out of the oven with an ice cold glass of milk.

Cream scones with dried tart cherries and dark chocolate chips...you can have a warm one with tea, coffee or a nice glass of milk...OR with vanilla ice cream.
