What to cook in summer heat? Is there such a thing as a summery meatloaf? Chili seems too heavy, and I prefer tacos to be of the shrimp, chicken or pork variety.
Suggestions Eaters?!?!

You can always make a big batch of meatballs for spaghetti, meatball subs or stuffed peppers. Then freeze what you don't eat.

You can make a meatloaf with corn and beans and tomatoes...those flavors scream summer to me.
And there are always stuffed peppers that are easy to make and great for leftovers.

Do you like Indian food? You could make kheema, or spiced ground beef, and eat it either with naan or rice. Here is my dad's recipe:
Take 1 pound of ground beef, mix it with 1 tbsp each of minced garlic, ginger and yogurt (or use 1 tbsp ginger-garlic paste if you have it). Let it marinate while you chop 1 onion and (optional) some chilis and ginger. Heat 2 tbsp oil in a pan, add 1 tsp of cumin seeds and coriander seeds, sizzle for 30 seconds then add the onion, chili and ginger (if using).
Add the marinated beef, along with 1/2 tsp of turmeric and 1 tsp chili powder (though I use 1 tbsp!) and 2 tsp salt. Stir and fry, mixing in the masala and adding water, 1tbsp at a time, to make mixing easy. (don't add more than 1/4 cup).
Garnish with Cilantro!

I usually do this with non-ground beef, but it would probably work with ground as well:
Saute til not quite caramalized onions and green peppers plus a medium hot pepper (as you would for sausage). Add some of the beef (but gosh, 2 lbs is a lot). Once cooked add some terriyaki ingredients and cook til syrupy: soy sauce, ginger, garlic, sugar, maybe some port or brandy. (can sub hot pepper flakes here if you don't have fresh.)
This can be made ahead. At dinner time saute in a tortilla folded over like a quesadilla. Top with nice cold sour cream.
I'd also try onion and beef in the tortilla or pita with tzatziki sauce (yogurt with cuke and mint, or dill, oregano, lemon. Google a recipe that suits). Add shredded lettuce and tomato if you want.

Rather than tacos how about a taco salad? Saute the beef with minced onion, add either taco seasoning pkg or chili powder, oregano, garlic, a little sugar, This keeps in the fridge and only needs to be heated in the microwave when you're ready for salads.
Mixed greens, cukes, tomatoes, green or red peppers, shredded carrots, beans, anything you like. Top salad with gently crushed corn chips (Doritos add plenty of flavor, but plain is fine) grated cheese, and then top with your warmed beef mix which will melt the cheese. Dress with salsa, french dressing, thousand island, or some combination. Serve with sour cream and avocado.

use it to stuff fresh summer veggie. @orchidgirl already mentioned peppers, but you can also sautee the ground meat iwht some onions/garlic/spices/herbs and stuff tomatoes or zucchini and finish off on the grill

How about korean spiced beef in lettuce cups? Very light and refreshing. I serve it w/ crushed roasted peanuts on top, and with a cucumber/mint salad on the side. http://www.gov.mb.ca/agriculture/food/spirited2/cse01s13.html
Also, if you wanted meatloaf, how about salsa meatloaf? Mix the beef together w/ one large jar of salsa (or you can use fresh salsa), some cilantro, breadcrumbs, and 2 eggs. -- mix and bake.

Wow! These are all great. I wanted to use this all up today without having to resort to freezing unaltered beef, so the meatball angle seemed perfect for freezing. I ended up doing a pound of 'regular' italian meatballs, and another pound into a SE recipe from earlier in the year. I had forgotten about these thai beef rolls. I happened to have both the mint and thai basil on hand from some vietnamese fresh rolls last week---so minced those into the recipe. I hope they freeze well.

We're a small household of two, so having meatballs in the freezer is helpful for a meal on the run. Thanks everyone for their suggestions.
As we are nearing the end of summer, and (hopefully) drawing near to the end of the recession, I am sure that I am not the only one looking to be creative with economical ground beef. Keep the suggestions coming! I will use this as a resource in the future I am sure.

As above freeze it. Other then that Sloppy Joes, that mac and beef stuff, make a cheeseburger pizza, make meatloaf serve it hot that night and make sandwiches the next day. Make Scotch eggs with it but instead of pork use the beef.

Try Open Beef Kofta, it's a very summery quick and easy version of a Gyro or Kebab. No hassle of forming kebabs, or hassle of grilling, you can do the whole thing in a standard kitchen in 10 to 15 minutes.

white rice, cooked hamburg, can whole tomatoes, garlic, salt and pepper mix and eat. it's filling but not heavy and it's pretty tasty.

I made simple, homemade enchiladas the other evening - sauteed the ground beef with onions, cumin, garlic, chili powder, red chili flakes, a bit of salt, pinch of oregano. After draining, I rolled up 4-5 tblsps of beef mixture with grated cheese in flour tortillas, which I lined up in a baking dish atop tomato sauce with spices sprinkled on it. More tomato sauce with sprinkled spices and more cheese on top. GREAT! But the best part was that I had enough to make and then freeze another pan, ready-to-go! Just defrost before baking.
