zuke dinner ideas?

i'm broke for a few more days, so i'm limited to eating some lovely zucchini that a coworker brought in. i aso have eggs on hand, olive oil, & seasonings. that's it (i know, i'm like mother hubbard with her bare cupboard)....any ideas on a satisfying meal i can make out of that?

have any dry pasta? i just read a recipe for pasta carbonara with zucchini. i can't rememeber where though.

Well, if you lightly saute your zucchini in oil with salt, pepper, oregano, and basil, you can pour a bunch of eggs over it and bake for a hearty, thick fritatta!

i think i've got some egg noodles left & i like the fritatta idea too!
(i made something similar to a fritatta last night with the last of my smoked salmon & some chives.)

I love making "zucchini fettuccine" -- peel the zucchini into long strips with a veggie peeler. Saute some tomatoes, garlic, and/or chick peas in oil and s+p, then add the zucchini, just until it's crisp/tender. Delicious, filling, cheap, and on the plus side, low in calories!

Also, if you add some fresh basil, you're golden.

I say fritata too...Since you have the EVOO I'd grill up the zucs beforehand...I'd eat that SU anyways!

Another idea is to fry up your zucchini. Dredge it in an egg wash, then in a flour, black pepper, kosher salt combo and fry up. Would be yummy with a housemade aioli. Have fun being creative with your zucchini!

I agree that scambled eggs with zucs are delicious.

Here's another idea if you're looking for something a little more satisfying, if you can afford a box of macaroni and cheese.

Scramble your eggs with herbs and oil and cut them into small bits. Finely chop the zucs and pan try them in oil. While this is going on, make the box of mac and cheese as your normally would (you don't need milk and butter, you can use oil and it will come out just fine). Combine everything into one dish and you can either eat it that way or bake it all together for 20-30 minutes on medium heat (maybe like 250 or 300).

My friend made Zucchini Parmesan last night. Similar to Eggplant Parm. Breaded and fried 1/4" inch thick rounds of zucchini, topped with a dollop of tomato, sprinkle of romano, bake to melt the cheese. Light, yet satisfying.

Or,
Sautee sliced zucchini with some garlic or scallions (anything oniony/garlicky would work, even the granulated stuff) and salt until tender, drizzle with sesame oil and sprinkle with toasted sesame seeds. Have with Korean Egg "custard" for lack of a better word. In a heat proof bowl whisk a couple of eggs with a couple of tablespoons of water per egg, salt, 1/2 teaspoon sesame oil, and about two scallions chopped (some people add a pinch of finely ground red pepper). Place the bowl in a pot large enough that the bowl fits completely inside, add water up to about halfway up the side of bowl, cover, simmer until egg is just set, should still be jiggly. Or you can microwave, but the texture wont be as silky and tender and I don't really recommend it.
