Red Currant Recipes
I just received a small amount of red currants from my CSA yesterday. Does anyone have any recipes that are proven (I don't want to waste these beauties on something untested) and are good for a small amount? I don't think I have enough for jam. I'm looking for sweet not savory recipes. Thanks in advance!

meem - I'm gonna make scones with mine and the other berries but I'm not sure if this will work out since they are fresh and not dried. That was the only thing I could come up with since we have only small amounts.

What I usually do with them that is tried and true for me is to mix them with another fruit in a pie, or sprinkle them over the top of a lemon-yogurt cake and serve it with more thick yogurt that has been sweetened with honey and lemon.
Red currant and granny smith apple pie is wonderful, as is currant with cherry and peach.

Confirmed! :) And I LOVE the idea of putting currants in a fruit pie. This might make me try to conquer my fear of pie crust...

They really are great with the tart apples. I don't add too much sugar or spices so the pie filling stays tart and you can still really taste the currants.
Oh, and for the lemon-yogurt cake I mentioned above, I meant to say I sprinkle the currants on BEFORE baking, so they cook into the cake.
Don't fear pie crust!! It is not as scary as it might seem! :)

i made this once. it was a bit sweet for me, but i made it with the jam instead of the fresh currants, which would probably be much better.
