quick chicken ideas

I have marinated about 5 chicken breasts over the last 24 hours and now that it's time to eat them, I just don't feel like throwing it on the grill. I used stubbs (the best store bought, if you need a quick fix in my opinion), an entire lime, a beer, and kosher salt.

Anyone have some suggestions or ideas on something to do instead of grilling with those flavor combos?

Broil the breasts. When almost done, slather with Stubb's sauce.
Squirt a little lime on the breasts before eating.

Drop a few grains of salt and squeeze a lime wedge into the beer, then drink it.

Is Stubbs a seasoning blend? Around here (Seattle), we have Johnny's, which is orange-y like Lawry's and has salt, MSG, paprika, sugar, pepper, etc. If it's an all-purpose seasoning, with the lime and beer, how about a quick saute and use the chicken for fajitas, burritos, tacos, quesadillas or something along those lines? Serve with Tex-Mex rice (rice, corn, salsa, topped with cheese) and a lettuce/avocado salad with lime vinaigrette.

Sounds like your chicken would rule grilled up and sliced over a Southwest Salad (corn, black beans, green onion, greens, tomatoes) with a chipotle dressing! mmmm.... good luck!

Can you bake them with rice and make a sort of casserole?

if you have a wok, slice the chicken thinly and stirfry with a bunch of seasonal vegetables!

I usually cook my chicken breasts in a skillet for about 5 minutes on each side, then add a bit of liquid and cover and cook until they are done (use thermometer!).

Since you already have a barbeque type of sauce going on I would bake them off, shred some for a pulled pork style sandwich, the remainder could at that point probably be used for pizza, top a 7 layer dip with some.... I hope this helps!
