Pumpkin seed oil
I bought a bottle of it to drizzle on a pear and squash soup months ago, and I'm sort of at a loss for what to use it for now.

Wild Rice Salad w/Mint
8 servings
Prep plus cooking time: approx. 1 hour
1 cup uncooked wild rice
4 cups chicken broth
1 cup toasted sliced almonds
1 cup golden raisins
3 oranges, scrubbed, zested, and juiced
2 tbsp. chopped fresh mint leaves
6 scallions, thinly sliced
1/4 cup olive oil
1/4 cup pumpkin seed oil
1/2 tsp. sea salt
1/4 tsp. fresh ground black pepper
Place rice in a mesh strainer and rinse well with cold water. Combine the rice and the broth in a 2 qt. saucepan. Bring to a boil, then lower heat, cover with a tight–fitting lid, and simmer. Check doneness after 40 min. Rice should be al dente, not mushy. Continue cooking, if necessary, for up to one hour, then drain and let cool.
While rice cooks, soak raisins in hot water for 20 min. until soft, then drain and reserve.
Combine the rice, nuts, raisins, orange zest, scallions, and mint in a salad bowl and toss with your hands.
Combine the oils, orange juice, salt, and pepper in a blender or bowl and whisk until emulsified. Pour over salad and mix well. Adjust salt & pepper to taste.
Let marinate in refrigerator for at least one hour before serving. Will keep 2–3 days in the refrigerator.

@salpico - that sounds very delicious.....
whatever you do, don't heat the pumpkin oil or you'll ruin the benefits of it... it's really used as a drizzling or salad dressing oil....
i guess you can use it in place of any oil in any salad..... try using it on a green salad with some sunflower seeds, dried cranberries -- pecans or something of that nature.....

@pooch - yeah, I know I can't hear it, and I think that's why I'm having such a hard time finding a use for it.

When I bought the pumpkin seed oil at Wegman's, they were giving out tasting samples of it dripped over Haagen Daz vanilla ice cream as a topping. It sound weird, but the intensely nutty flavor worked with the ice cream and was quite delicious.

Drizzled over a baked sweet potato with a sprinkling of pumpkin seeds, raw or pan-toasted. Okay, maybe gilded with a tiny dab of something cheesy -- goat cheese, ricotta, mascarpone, Philly cream cheese, a grating of Parm.
