Proofing bread

My wife is allergic to live yeast. Not usually a problem unless you are addicted to homemade bread - rising bread releases live yeast into the air. In the summer I can proof the dough outside but winter highs are regularly below freezing, making for a very long rise.
I need some suggestions for winter time proofing that allow for a reasonable supply of fresh bread. Thanks.
