Just wanted to say thanks to everyone who gave me advice on the Seafood Cannelloni. It turned out AMAZING. One friend was so pleased he was laughing.
I did a marinara base. Then stuffed fresh pasta with fresh lobster, crab, prawns and scallops (which I sauteed first in garlic, shallots & wine), then added sauteed spinach with garlic & oregeno. Mixed that all up with some ricotta & parm and stuffed away.
Topped off with bechamel, mozza & parm. Oh and I put chilis in there too.
Expensive but incredible.
