Halp! I mistook FLOUR for PANCAKE mix...
So, I have 1.25 cups of water, .25 cup of oil and an egg blended with 2 cups of white flour--what can I add to turn this into something edible? I'm not a baker, so I don't have much sense of these things. Can I turn it into a cake batter? A quick bread? I already made up the (correct) pancake batter, so I don't need info on converting this to that. I DO have baking soda in the house, but no baking powder; I do have sugar, vanilla, salt, yeast, etc. I have put the mixture into the 'fridge and hope I can find a way to use it...Thanks for your advice!

I would add a teaspoon of yeast, a teaspoon of salt and a tablespoon of sugar, then keep adding flour until it forms a bread dough. bread dough is more forgiving than other dough/batters, I think.

If you don't want to do yeast-risen pancakes, put in a teaspoon of baking powder, 1/2 tsp. cinnamon, 1/4 tsp. salt and between 3 tbsp. and 1/4 cup of sugar or brown sugar.
Make one pancake and hope for the best!

Add another 1/4 cup oil, 3/4 cup of sugar, 1 tsp baking soda and 1/2 cup cocoa. Add a tbsp. of white vinegar to about 1/2 cup of milk, and stir it all into the mix you have with a healthy shot of vanilla.
Now you have quick chocolate cake!
The bread is also a very good idea.
For soda bread you could mix 1/2 cup of milk with a tbsp of vinegar, add a teaspoon of baking soda and a teaspoon of salt to the flour mix, along with at least another cup of flour, and mix all of it together. Add more flour if needed til you have a raggy-looking dough. Shape quickly into a rough round and bake on a greased pan at 425 for 40-55 minutes, til it sounds hollow.

I think I will try to cake it--take sadiepix's advice, but go with some almond flavoring instead of the cocoa so my Beloved Husband will join me in eating it...I'm thinking bake in a greased and floured pan at 350 for like 30 minutes? I'll let you know what comes of it...And thanks again!
