Egg-free ice cream
Hi! I'm new to serious eats, and I wonder if someone can help me. I'm looking for a recipe for chocolate (but I'll take any flavors) ice cream with no raw egg. Hope someone can help me, thanks a lot!

Have you tried David Lebovitz's site? He has several chocolate ice cream recipes, including a couple egg-free versions. I haven't tried those, but I've had success with most of his other recipes.

Are you looking for no egg at all? Because many ice creams start with a custard base -- and that cooks the egg so you don't have to worry about eating raw eggs.

I never bother with the custard when I make ice cream at home - you just have to make sure not to let it thaw and then refreeze - eat it all at once with your family/friends :)
2 cups cream, 1 cup milk, 3/4 cup sugar (superfine granulated is nice for this purpose)
then add your flavouring - whatever you want. if I were making a chocolate base, which I usually don't do, I would just go ahead and melt a couple of ounces of chocolate, let it cool, and then blend it into the base with a stick blender. You can always add more if you taste the mix and it doesn't seem chocolatey enough.
But then I'm an improviser for everything but baked goods. :)

Yeah, you want a Philadelphia-style ice cream (ie. no egg). Though, I know of very few recipes that would use raw eggs, usually it's a cooked custard. Check out The Ultimate Ice Cream Book, it's got a great chocolate ice cream recipe.

are those for ice cream makers? Thanks for the quick replies.

sfgoo, I didn't see the second part of your comment before. I'm looking for no raw egg. A recipe with egg that is completely cooked should be fine.

@ljiwf, you should be fine with any ice cream that has a custard base, since they are usually cooked. you can do the philadelphia-style ice cream that has no egg, but you will get the best taste and texture from a custard based recipe.
If you do try and enjoy some of the ice creams on David Levovitz's website, then definitely check out his book, The Perfect Scoop. He has some great recipes. I have some other ice cream cookbooks, but I usually fall back on his.

i've never heard of a i.c. recipe with raw eggs. as all the posters said custard-based, sorbets (yes, you can make a chocolate one), gelatos and philadelphia style ice creams would all be okay.
also, what kind of ice cream is made without an ice-cream maker? so, i think you're safe putting almost any recipe in one. most ice-cream makers come with recipes or you can find them on the manufacturer's website.
