App. w/Margarita's
My boyfriend and I were invited to get together with another couple this weekend. It's the first time I am meeting them and I love how my fella acts so proud when I cook for his family and friends. Anyway...Margarita's will be the cocktail of the day and I want to bring something that is a good pairing with tequila, make ahead and unique. (not chips and salsa) Any recommendations from my new foodie friends?

Guacamole-- of course.
And maybe a nice Mexican shrimp cocktail or tiny shrimp tostadas.

Chorizo bites, chipotle and black bean dip, quesadillas, jalapeno poppers (home made), ceviche, chile rellenos-cheese bites (like egg fritatta with poblano chiles, cut bite sized), corn and black bean salsa, skewers of grilled seafood or pork with a fruit salsa (mango, pineapple....)

These may not be "unique," depending on where you're from.
However, for Margarita nights my wife will generally make either Nachos (the good kind with ground beef and cream cheese and jalapenos,) Taquitos, or Quesadillas,
All 3 of those go great with cream cheese, avocado, and jalapenos.

The problem with guacamole as a make-ahead is the color. I would beware of that.

Best ever app with Top Shelf Margaritas, tamales. I will warn you that they are a lot of work done properly. Best done over two days and with at least one kitchen assistant. That being said, at least once a year I will make a batch of around 5-7 dozen depending on the protein. They freeze well and can then be steamed on site.
Ask and I will dig out the tamale blog links. I think I have a pork and green chile, a chipotle beef, and a chicken green chile.

i make a guacamole with crab meat in it.... your favorite recipe of guacamole with a good quality crab meat folded in.... never any leftovers on this one.

Shrimp cocktail with mango/orange/ lime salsa. I just made some of the salsa with mango and orange chunks (small), fresh lime juice, tomatoes and red onions (small dice), cilantro (you can use flat leaf parsley if cilantro is not your thing) and for heat I used a combo of a small amount of hot sauce and fresh minced jalapeno.

Shrimp sauteed with lime and mini tacos with a filling of your choice - maybe spicy chipotle chicken with diced tomatoes, and a bit of sour cream.

FYI: to solve the guacamole changing color dilemma, just take a piece of saran wrap and place it DIRECTLY onto the top of the guacamole. Make sure no air bubbles are under it and you'll be fabulosa!
