Aioli! - What now?
Made my first batch of aioli last night. We tucked it into pitas with grilled veggies--Yum! I'd love your ideas on what I can do with the rest of it.

it's great as a dip for fries! seriously :)
you can also use it as dressing for potato or tuna or chicken salad.

Dip steamed artichoke leaves in it! Or asparagus. Or you could make a traditional French aioli platter: Take a large tray/platter, and put a bowl of aioli in the center. Surround this with cooked & trimmed artichokes, poached cod, beef carpaccio, blanched snow peas and green beans, steamed new potatoes, cherry tomatoes, hardboiled eggs, sliced red bell pepper, sliced zucchini...really, whatever vegetables appeal to you. You can leave out the meat and fish entirely, or do shrimp instead. Sprinkle the whole platter with chopped parsley and capers, and enjoy!

roasted chicken salad would get my vote, but to be honest anything you'd use store bought mayo for, your homemade will make even better. how about homemade dip or dressings.

potatoes aioli... it's a potato salad with boiled potatoes, aioli, and fresh parsley... typical in Spain.
you cn also have it with bread and a boullabaise - a seafood soup from the south of france.
Use it any which way you would use mayonnaise...

On grilled fish or chicken, on grilled or steamed vegetables, on a chopped vegetable-meat salad, on a sandwich, on potatoes, as mentioned above-- use as you would a flavored mayonnaise.

pretty much anything dipped in aioli is great. david lebovitz recently wrote a great post on it.

Yes, I did. It was going well at first, then about half way through it broke. I think I added too much oil at once. I started with another yolk and whisked in the broken sauce. It worked beautifully after that. It was reallly thick and basically formed a ball in the bowl. I added a few drops of water which thinned it out and lightened the color a bit.
Sounds like I need to try it on a potato salad. I have a some baby reds on hand.

fancy tuna salad or chicken salad or deviled eggs and some tarragon. or potato salad. or on some poached fish.

If you get bored with it you can always flavor the aioli with horseradish.

Honestly, I hate mayo, and I use aioli in its place. Sandwiches!

4 sure fries,
Crusty bread with turkey breast, aioli, baby arugula, provelone sandwich,
Its a good dip for fried calamari,
...probably anything! You can get really creative
