Agave Nectar Expiration?
So...ummm...does agave nectar go bad? I forgot I bought a bottle quite a while ago (over a year, for sure) and I just found it today...unopened in the cupboard.
There's no expiration date on the bottle...y'all think it's safe to use still? Is it like honey in that it generally doesn't go bad?

my gut feeling is that it wouldn't go bad, but maybe you should google up something on agave and find out for sure..... i think it's in the same category as honey or molasses.... or even corn syrup for that matter.

From the FAQs from a company that sells it:
3) Agave Nectar will not crystallize. It is high in purity and stable in composition. It is easy to store as it has a very long shelf life, approximately three years.

I would think agave nectar would be shelf stable for a really long time since it's essentially the same thing as HFCS: a glucose-frustose syrup derived from a starch through heating or enzymatic conversion.
