5 dozen eggs in the house

My parents, finding eggs on sale (2 cartons for $1!!!) several times in the last week, have purchased many cartons of eggs. I think, right now, we have 5 dozen left. (Many were used in a large batch of tea eggs and soy sauce eggs) Now, I LOVE eggs, but I'm looking for something extra awesome to do with them. (perhaps to fall in love again)

Is there something new and interesting I can do with these? Is there something you wouldn't do if you had a normal quantity of eggs, but would do if you had a lot? This is a rare occasion... really.

When I lived in Spain, one of the best things that I had the pleasure of eating was Tortilla Espanola. It's one of the greatest comfort foods in the world, if you ask me. There are a lot of variations of it, but here are a couple that I think would work really well.

Pound cake. Creme brulee. Quiche. Gelato. All extra awesome if you're in the right mood, and a bit boring if you're not in the right mood. Now that I think about it, they could all fall under the umbrella of comfort food.

gougeres, souffle, flourless chocolate cake, lemon curd

Stuff I would make with lots of eggs:

Flan, creme brulee, custard: this uses the yolks and lots of it. you can freeze the whites and keep them almost indefinitely in the freezer and make the following:

-Angel food cake: Rose Levy Berenbaum's chocolate angel food cake is superb and uses ~16 whites (from large eggs).
-Meringues. Homemade meringue cookies are way superior to the store brand (e.g. Trader Joe's)

Other things I'd make with eggs:

-Souffles
-Cakes (you can freeze unfrosted cake and always have cakes on hand for last minute company dessert). There's nothing better than a genoise (think lots of egg and very little leavening in the form of baking powder) for a jellyroll or Boston Cream Pie.
-Deviled eggs
-Egg Salad (my fav comfort food)
-Hollandaise Sauce
-Creme Anglaise
-Ile Flottante (Heavenly, no pun intended)

scramble, make breakfast burritos, freeze.

Make an old fashioned pound cake! I have a recipe that uses half a dozen at a time...

you could:
be like rocky & drink them?
egg some houses of people you don't like?
dye them & throw a 1/2 way to easter egg hunt?

Make a gallon pf pickled eggs.1part water,1Part white vinegar simmeredwith a bag of crab boil and maybe a few drops of red food coloring.Sometimes I like to throw a bunch of onions in too.redneck pickled eggs n onions.

Hello? Ice Cream! In huge batches!

I also third the tortillas and recommend making a Strata for brunch.

You could make some angel food cake, sponge cake, macarons, meringues (I second all the above!), and make LOTS of lemon curd or custard (which you can use to fill the previously mentioned Boston Cream Pie, that also requires some eggs in the making). The great chain of using eggs!
(I'd probably use them in making pancakes or waffles every day, to be honest).
Or make 5 "quesillos" (like a flan, or custard) with those eggs.

Deviled eggs! Throw a party and make a bunch of varieties!
Angel food cake from scratch!
Pickle them!
Egg salad!
Roast them!
Make a variety of muffins, freeze and grab as needed!
Souffle!
Strata!
Slice on to a sammy!
Tapioca pudding!

If you separate the yellow's, beat them a bit, add to an ice cube tray and freeze for later!

Pecan or pumpkin pie

You could teach yourself to juggle. :D

I normally go through the most eggs when I make Yorkshire puddings or if I'm making breakfast burritos in large batches to freeze.

Try Jilbour: an Armenian Egg Stew. Here is a simple recipe.

1 pound of onions
1/4 pound of butter
dried mint leaves (dash)
1 pound fresh or 1 large can of tomatoes
eggs to suit
salt & pepper to taste

Method

Cook onions and butter together until lightly browned. Add mint leaf, tomatoes and a little water. Bring to simmer and then crack in as many eggs as you want in the stew poaching same until yolk is cooked. Serve immediately with radishes!

We usually add other veggies too like green pepper with the onions. We also use a lot more butter, and a dozen eggs in this is NOTHING. Just don't stir after you add the eggs.

Popovers! my kids love em warm from the oven. I also make this dish I call Cheese Bake.
dozen eggs scrambled
1 C.milk
1 T Curry or more if you want
Cayanne to taste
sliced onion cooked in butter or Green onions
Saltine Crackers crushed in a 9x13 dish
grated cheese-cheadar, jack, parm,munster whatever you got on hand

mix, pour over saltines and bake 350 till done 45 min or so.

You could do the Chinese egg and tomato stir fry thing too...

Try a Kuku (www.chow.com/recipes/11052)! The first time I ever say a recipe for one was in a vegetarian cookbook and I've though of making one ever since. I haven't since I'm not a frittata kind of girl. But baked eggs is my fave way to have them...even something as easy as eggs in hell (hot tomato sauce).

Or you could always make angel food cake and hollandaise sauce with the leftover yolks :)

make some quiches and freeze them

I suggest sitting down to a viewing of Cool Hand Luke and see if you get inspired.
