Where to eat near I-25 (Trinidad/Colorado Springs/Denver)?
We're headed to Ft. Collins this weekend for Brewfest and are looking for interesting places to eat on the way. We'll be taking I-25 up from Las Vegas, NM, and passing through towns such as Trinidad, Pueblo, Colorado Springs and Denver.
I don't mind going a little out of the way for something special either - where should we stop?

Trinidad is known for its Italian restaurants, though I've never tried any.
My boss gave me the name of a good one a few years ago, but I can't remember the name. I'm sure it was some kind of an Italian last name
That may be something to look into...
In Denver, the Cherry Cricket has great burgers, rings and stuff. A little out of the way, though, from the interstate. We like Wahoo's fish tacos. It's a chain place. It's good and there's one right off the Hampden exit.

Pueblo is known for their Mexican green chili, but that's about as much as I can tell you. Don't bother with downtown Pueblo, although Angelo's has good pizza.
