Vegetarian Baked Beans Recipe?
Hi everyone, I'm in need of a good recipe for vegetarian baked beans for a bbq this weekend, any recommendations? I don't have a crockpot or dutch oven (though I have something I can use in the oven and cover with foil) can they be done on the stove or will that compromise the flavor? One last thing, the bbq is saturday at noon and I have to travel most of the day tomorrow to get there, should I make the beans tonight (is two days too funky?) or stay up and do them tomorrow night? Okay enough questions, I'll let you guys do your thing. Thanks for the help!

You can also cook them on a stove top.
Do you want a recipe for baked beans from scratch or one using canned beans?

Either dry or canned works, I just don't want to use the quick method that uses canned baked beans. Does the flavor change if you do them on the stove?

Here's one from the Coleman Mustard site and it sounds delicious.
Vegetarian Bbq Beans
Yield: 6 servings
1 lg Onion; chopped
1 lg Pepper; chopped
1 Garlic clove; crushed
1 1/2 ts Colman's Mustard
1 1/2 ts Chili powder
1/2 ts Cumin
1/2 ts Turmeric; dried
1 c Tomato sauce
1 1/2 tb Molasses
1/2 ts Apple cider vinegar
1 ds Tabasco sauce
4 c Beans; cooked

Preparation Time: 0:35
Saute onion, pepper and garlic in 1/4 c water for 5 minutes. Add Colman's Mustard, chili, cumin, tumeric and stir well to mix. Add remaining ingredients and mix well. Cook over low heat until heated through, about 15 minutes.
HELPFUL HINT: This is great on a bun like sloppy-joe mix, with ketchup and mustard. Good take-along for picnics. Use either hot or cold. Also good over whole grains or as a sandwich spread.
My note- If you want "smoky flavor in your beans add some smoked paprika too. It's a nice substitute for the folks who need their "bacon" flavor in the beans.

This makes a fairly large batch of beans.
One quick was we make them is to saute a diced onion in oil until soft and somewhat carmelized. Open up 4- 15 oz. cans of beans and drain. Add them to the onion. Add a couple of tablespoons of BBQ sauce, some molasses, brown sugar, vegetarian Worchestershire sauce, a teasoon or two of Chipolte Tabasco (love the smoky flavor) and simmer. Adjust the seasonings to your taste. Throw in a shot of Jack Daniels at the end of cooking time for an extra "something" in the beans.

I like making anything like that a day or 2 ahead of time because they always taste better the next day. I have had veggie baked beans with some very extra firm tofu in it.
