Strange green specks in carrot cake

I recently baked a carrot cake from a Cooking Light recipe and have found mysterious dark green particles in the cake! I used bagged shredded carrots and the green things are very similar in size and shape of the carrots in the cake, but if they are in fact carrots, why did some of them turn green? Has this ever happened to anyone else before?
