Hey, I'm having a traditional Argentine Asado in a couple weeks and have found some authentic recipes/foods but would like more!!

I need:

Vegetable dishes

A general flavor profile of spices and herbs would be REALLY helpful!!!

Any other tips would be great! thanks!
