Magic Meatballs
Hi
My son has got it into his head that he wants to cook meatballs at the weekend when we're together. Does anyone know of any good and easy recipes that will let him get his hands dirty but aren't too complicated cheers! B

Sweet and sour:
1 standard can cranberry sauce
1 large can crushed tomatoes
some lemon juice (3 tbsp? ish?)
1 lb. ground beef
1 egg
1/4 cup breadcrumbs
a couple shakes each garlic powder, onion powder, salt, pepper.
Put the cranberry sauce and lemon juice in a wide-bottomed pot and turn the heat on to melt it down.
Mush the meat together (with your hands. It's way more funner.)
When the cranberry is fizzling a bit, add the tomato sauce, stir, bring to a simmer (shouldn't take long).
Roll the meat into balls and plop into sauce. Cover, turn down the heat, simmer for 20 minutes.
Eat over rice, noodles, orzo, bread.

Don't know how old your son is, but mine is 19 months and this is the only form he will consume ground meat in:
"Crunchy" Meatballs
1 lb ground turkey
2 eggs
1/2 cup breadcrumbs
1/2 cup milk
1/4 cup shredded or grated parmesan
1 tsp garlic powder
Salt and pepper to taste
Additional breadcrumbs and parmesan for coating
Mix eggs, milk, breadcrumbs, parmesan, garlic powder and salt and pepper together in bowl. Add turkey and mix gently until combined. The mixture should be quite wet. Form into small balls (a tablespoon or so) and roll in breadcrumb/parmesan mixture. Bake at 350 for 10-15 minutes until no longer pink inside.
My son likes them small so they're like finger food for him. The small size also works well if you're going to put them on a sandwich. Plus the cook quicker. When he gets older and will understand not to put his raw-turkey-covered hands in his mouth, I will let him help mix. He will eat anything crunchy so the coating on the outside helps with that. He's not much of a meat guy, so I make these all the time to get him to eat!

When I was a kid I used to make my folks dinner once in a while. It was always meatballs with cheese in the middle. I was always so proud and thought they LOVED them. So, next time I'd make them again.
Now its a family joke, apparently the meatballs were tasteless and the cheese was never quite melted, needless to say they DIDN'T love them!

I made these, altering only by soaking the breadcrumbs in an equal part of milk before mixing in, and pretty much died and went to heaven. Can't recommend them highly enough!

It seems meatballs is really all about a few core ingredients + experimentation + getting your hands in there

Heya
After seeing what ingredients we could get our hands on, e had a go at using half ground beef/half ground pork, using 1 egg to bind
Seasoned well, and used some rosemary and cumin
My son shaped the meatballs (even tried a bit of mozzarella in the middle) - very messy, but lots of fun :)
I did the sauce - a basic tomato and basil one - and we both did the eating
