lunch today
I enjoyed my lunch today so much that I feel the need to find out if anyone else enjoyed their lunch (or breakfast) so much that it's still sticking in their minds. I decided to eat my first tomato sandwich ever, inspired by last week's tomato sandwich threads. Very easy, very simple, very quick, very summer, very good. It will certainly not be my last.
slice french bread, toasted (out of the freezer)
a thin slice of fresh mozz (in lieu of mayo re: tomato leakage)
light drizzle of olive oil
1 deliciously ripe purple heirloom tomato
balsamic vinegar on each cut side of the tomato slices
handful of baby spinach
thin slice of fresh mozz
slice of french bread
