Homemade Popsicles
Does anyone else make popsicles?
I just made my first batch of the season with sweetened grapefruit juice and vodka with a mint leaf at the bottom. When I was growing up my Mum made them with Jello. I think that it was to reduce the drippage....

I made some last weekend and they really are fabulous. No booze in them though...kidlet eats them. Fresh strawberry and pineapple. SO much better than store bought.

I like watermelon/lime/mint and strawberry/lemon best. Both with booze if possible. Yum!
I like the idea of the grapefruit--that is not a fruit I use much in warmer months, and I should.
I like doing pudding pops too. Certainly not good for you, but tasty, and better than store-bought.

I made Alton Brown's fudge pops. They're awful. Don't know if it's me or the recipe since I've seen mixed reviews for it.
I like making them with lemonade or fruit juices. We also make them with flat soda (such a waste to throw away the root beer)

@ginger - Flat soda, huh? Cool. I've been wanting to make chocolate ones...with pudding mix. Assume they'll turn out good. Either way, kidlet will eat whatever comes out!

I make frozen olive brine ice cubes with a tooth pick in the middle. I put them in my martinis to keep them frosty. This way, as the juice melts my drink just gets so Dirty! and I love it!
Does that count?

@phila--I don't know if that counts as a "popsicle" but it sure is clever!!

@phila - That's a great idea. I worked in a coffee shop where we made coffee cubes for iced coffee (so it wouldn't dilute).

I was thinking of ordering some popsicle containers, I found some neat ones on www.prepara.com. I like the watermelon flavored ones.

Last summer I made cantaloupe and cream popsicles that were amazing. Pretty much anything you can put in a blender makes a great popsicle. I really like the star shape molds but I found some smaller ones at the grocery store that work well too.

Tropical Fruit Popsicles
1 Cup mandarin oranges with juice
1 Cup crushed pineapple
1 mango, chopped
2 Cups orange, pineapple or grape juice
Add ingredients to a blender and blend until smooth. Pour into Popsicle molds and freeze.
Applesauce Popsicle
1 cup applesauce
Add a little water if you would like it thinner. Pour into molds and freeze.
Juice Pops
Try mixing two juices together for a different flavor.
1 cup orange juice
1 Cup white grape juice
Stir together and pour into molds. Freeze.
OR
1 Cup pineapple juice
1 Cup mixed fruit juice
Stir together and pour into molds. Freeze.
Watermelon Popsicles
2 cups watermelon cubed remove seeds
1 cup apple juice
Blend in blender until smooth. Pour into Popsicle molds and freeze.
Pineapple Popsicle Recipe
1 quart milk
20 oz can of crushed pineapple, drained
1 ½ Cups sugar
1 teaspoon vanilla
Blend in blender until smooth. Pour into molds and freeze.
Fruit Slushies
½ Cup sugar
½ Cup water
2 tablespoons lemon juice
4 cups watermelon diced or 5 cups strawberries
In saucepan, heat sugar and water. Bring to a boil and stir until sugar dissolves. Allow to cool and stir in lemon juice. Puree fruit in blender, substitute a different fruit if desired or experiment with different flavors. Add sugar mixture with fruit. Blend together. Pour into small paper cups and freeze.
Multi Layer Fruit Pops
2 Cups sliced fresh strawberries
¾ Cup sugar, divided
1 1/3 Cups fresh peaches, sliced
2 cups diced watermelon
Puree in blender strawberries and ¼ cup sugar. Pour small amount in molds or paper cups about 1/3 full. Put in Popsicle sticks. Freeze. Puree peaches and ¼ cup sugar in blender. Pour over frozen strawberry layer. Freeze. Cube watermelon and remove seeds. Puree watermelon and ¼ cup sugar in blender. Pour over frozen peach layer and freeze.
Jell-O Pops
1 small package flavor gelatin
1 cup boiling water
1 cup vanilla or flavored yogurt
½ cup milk
Dissolve gelatin in boiling water. Allow to cool. Then stir in yogurt and milk Pour into Popsicle molds or cups insert sticks and freeze.

We've made pickle popsicles with the leftover brine from kosher dill pickles. It's...different.
We used ice cube trays with toothpicks instead of a popsicle thingie.

There's a company marketing pickle brine popsicles to kids as an alternative to sugary snacks. I guess they're trying them out in schools? Supposedly kids love them because they're bright green and weird.

I did order the molds from prepara.com and they are neat. Called volcano pops they have a small hole to put fresh ingredients after the popsicle is frozen.

Try these:
Mexican Chocolate Pudding Pops
About 3-1/2 cups mix, enough for 10 2-1/2-ounce pops
• 2/3 cup sugar
• 1/4 cup cocoa powder*
• 1/4 cup cornstarch
• 1/4 teaspoon salt
• 2 teaspoons cinnamon
• 3 cups milk
• 3 ounces semisweet chocolate, chopped fine*
• 1 tablespoon orange liqueur or 1-1/2 teaspoons almond or vanilla extract
Combine first five ingredients in medium saucepan. Place pan on medium- to medium-high heat; whisk in milk until smooth. Cook, stirring almost constantly, until mixture thickens, about 10 minutes. Cook 1 minute longer, then stir in chocolate and liqueur. Pour into molds; freeze 4 hours or overnight.
You can skip the liqueur of course and just add extract. Or try Kahlua instead of orange liqueur.
