Green Rice w/ Pine Nuts

If this one isn't healthy enough for you, leave out the cheese. This is a recipe I took from the lid of a box of pine nuts and tuned up.

GREEN RICE

Ingredients
1/2 Tbsp Olive Oil
2 Tbsp Pine Nuts
2 Tbsp Garlic Minced
2 Tbsp Basil Minced
3 Tbsp Red Bell Pepper Minced
1/2 Cup Green Onion
1/2 Cup Mushrooms Diced
1/4 Cup Sherry or White Wine
1/2 Cup of Fresh Flat Leaf Parsley
1/2 Cup Spinach Leaves Minced
3 Cup Cooked Long Grain Rice (Texmati)
1/4 Cup Parmesan Cheese.

Process
Toast pine nuts over medium high heat.
Add onions and saute until transparent.
Add mushrooms and garlic. Saute until garlic is fragrant.
Add wine and simmer for two minutes.
Add basil, peppers, parsley and spinach. Cook until soft.
Add Rice, and stir frequently until hot (or until mixed if rice is recently cooked).
Remove from heat and add Parmesan cheese. Stir until mixed.
Serve hot.

Sounds good--just might try it tonight! Love pine nuts. Thanks!

It's best with an aromatic rice, dhorst. Oh, and you're welcome.

I happen to have a brown Texmati rice that I really like. This will be great with the grilled steak, chicken and bruschetta we're having tonight.

@GOM - that sounds truly delicious AND healthy! Thanks, I will add it to my recipe file.
