Eggs on sale this week. Kinda fussy - what to do with 3 doz?
Ok, so 1 doz. lg eggs were on sale for $1, bought 3 doz. Don't like unmixed eggs (hardboiled whites ok, yolks, yuck!). Quiche or omelette filling ideas?

I would end up making an angel food cake with the whites of a dozen, and a gold wonder cake with the yolks of that same dozen.
Swiss or Italian meringue buttercream for the cake with some whites, and hollandaise with the yolks.
A couple nights of omelets with spinach, mushrooms and goat cheese, or just some chives and cream.
Pancakes!
Lemony bread pudding.
Custard or pudding.
I like warm quiche with artichokes and cheese and onion. Eggs go in my pastry crust too.
Cream puffs--shells and filling.

I've been making frittatas a lot lately--they're a whole lot easier than omelets (no flipping), and if you have a nice big nonstick or cast iron pan, you can load one up with all sorts of sauteed veggies and/or meat and cheese, and still use up a dozen or more eggs (they reheat pretty well, too).

I just made this egg dish for a breakfast today that was pretty awesome:
Break up some stale bread on the bottom of a buttered baking dish
Put any type of meats/ lightly cooked veggies on top of the bread (i used bacon and broccoli)
Whisk between 6-10 eggs (depending on the size of your dish) with S/P and some cream or milk.
Pour egg mixture over bread and top with shredded cheese.
Bake, covered at 375 for 35-40 min or until eggs set.
It was a hit and I could imagine making it for an easy supper too! Maybe next time I will mix in some herbs and try some different veggies.

I would make fresh pasta with the yolks and a Pavlova with the whites--the beginnings of a great dinner for just over a dollar!

i second angel food cake and pavlova -- especially if you have the benefit of having local strawberries at the moment.
yolks - a nice chocolate custard..... or creme caramel. these are two very fattening options but, nevertheless.... delicious!

Funny enough, there's been a lot of discussion among my friends at Facebook about this dish. Eggs in Purgatory. If you like tomato sauce and you like eggs, this is a fun dish to make. Just think "Italian Huevos Rancheros."
In a small, shallow skillet, add 1 or 2 cups of tomato sauce. Marinara, puttanesca, any tomato sauce with veggies like bell peppers, a hot tomato sauce like fra diavolo - these all work great. I wouldn't use ragu (meat gravy).
Heat the sauce on medium till heated through, then lower the flame to a gentle simmer. With the back of a cooking spoon, make 2 divots in the sauce and crack an egg into each divot. Sprinkle each egg with S&P. Put the lid on the pan and simmer about 7-10 minutes or until the egg white over the yolk is cooked. The egg will still be soft.
Sprinkle with parm and serve with crusty bread.
Not sure if you can see the comments (pretty funny stuff) but here's a pic of the eggs in the pan. I actually drove to the supermarket for bread the night I made these. BF is not a big fan of eggs or tomato sauce so his night out with the guys was the perfect opportunity for me to indulge.

I made your suggestion on saturday night for dinner. I used homemade tomato sauce and fried mushrooms. YUM. I cooked the eggs a bit too long for my taste, but it was the epitome of comfort food from my favorite food groups: breakfast food, and Italian food. Thanks for the suggestion!

LOL this dish is contagious. The minute you hear about it you have to make it. A friend mentioned it on FB - he was in my gourmet group in Brooklyn - and after that I had to have it!
Sorry your eggs got overcooked :( . I had the flame very low and after 7-10 minutes of cooking, my yolks were still runny the way I prefer them. I love Eggs in Purgatory if I'm cooking dinner for myself. ;D
