Cooking with Amaranth
I have a package of Arrowhead Mills whole grain Amaranth and am looking for recipes to make salads or main dishes. And suggestions? Any advice from those who have used amaranth in salads?

If you have favorite recipes for barley or quinoa salads, you can use them interchangeably with amaranth. Prepare amaranth to package directions. Add your favorite veg, cut into small dice. i.e. Zucchini, carrots, red onion, etc. Make a dressing with chopped cilantro, olive oil, a touch of sherry vinegar or apple cider vinegar, S&P - plus a sprinkling of chili powder and cumin. If you want it spicy, add a SMALL amount of cayenne pepper (you can add it but you can't take it out). Toss, chill, serve.

i used some of this stuff too, it is funky. didn't use 'em in salads but more savory as another grain substitute, almost like porridge.

I mix with quinoa (2 parts quinoa to 1 part amaranth) and use as a couscous, or as a replacement for rice. The nutty flavor is great mixed with a stir-fry with cashews or peanuts. I suggest one with baby peas, tiny chopped carrots and broccoli, shallots and ginger, soy sauce, sriracha and honey to taste. Top with some beans sprouts and cashews for a super easy and healthy weeknight dinner.

One of the favorite ways in Mexico to prepare amaranth is to POP it and then add a sugary syrup. it even has a special name, which i forget.
