best veggie lasagna
so i'm looking for the best veggie lasagna in nyc. if i had my way, i'd go cheeseless, but i just want the best. gotta say, the raw version at pure food and wine is amazing, but i need something more 'classic'.

Don't have a "best" veggie lasagne, but if/when I do, it will have a bachamel sauce, lots of softly cooked garlic and spinach.
And it will have cheese.

I make a yummy roasted red pepper and zucchini lasagna, but alas, I'm upstate. I hope you find what you're looking for!

Are you looking for a restaurant that makes a good veggie/vegan lasagna or are you looking for a recipe to make at home??
I make a vegan lasagna using a selection of vegan cheeses to make a vegan "bechamel-like" sauce. The filling is spinach and almonds, really good.
This weekend I made a lasagna with my niece with a spinach, almond, mushrooms and tomato filling... if you use the vegan sauce from the lasagna above, it'll be cheeseless/vegan.

There actually IS a restaurant called Lasagna with two locations in nyc that should probably be your best bet to find one.

Here's an idea for a fun lasagna with a twist: I used wonton wraps instead of typical lasagna noodles in this vegetarian lasagna.
And here is one that uses eggplant and spinach. Enjoy.

I know it is not NYC, but I love the Moosewood veggie Lasgna...now you just need to find someone in NYC with the book (the basic moosewood cookbook), a kitchen (not always easy in NYC) and the willingness to make it for you.

Giada actually has a fantastic veggie lasagne...She makes individual portions, but I just make it in a regular 9 x 13 pan. Delicious!

I'm not sure if it's the best, but they have a delicious one here at the Falai bakery:

It's really tasty, and not too cheesy. It's surprisingly light for lasagna.
