Anyone know what's in the Green Sauce at Pio Pio Rikko?
I tried NY Peruvian Rotisserie chicken chain Pio Pio Rikko yesterday, and sampled the "green sauce" that they offer with every order.
Good. Lord.
Anyone know what's in this stuff? My guess is its some kind of pureed avacado concoction, maybe mixed with some salsa verde?

I just called and they were not very helpful. We played a little yes/no game though and she gave a negative to avocado. Maybe cilantro is involved?

Aji Verde Sauce
Ingredients:
3/4 cup fresh cilantro
1/3 cup Cotija Cheese
1/3 cup extra-virgin olive oil
1/3 cup water
2 to 3 jalapenos, stemmed, seeded, and diced (keep the seeds if heat is desired)
1 clove garlic
1/2 teaspoon red wine vinegar
1/2 teaspoon kosher salt
Directions:
1) Puree the cilantro, cheese, olive oil, water, jalapenos, garlic, vinegar, and salt in a blender until smooth.

They sell some creamy green bottled hot sauce at my local C-Town now. It's not exactly the same, but kinda close. Closest bottled sauce I've found. I have the hot one and the mild one in my fridge. I'll check to see what the brand is.
Yeah, Pio Pio and Sophie's has great Aji sauce! Maybe Sophie's > Pio Pio because it's hot.

I make a similar sauce with this big jar o goodness "Coriander Chutney" from Patal Brothers. Mix it with Greek yogurt and you're done.
