Anyone ever try a beefalo burger?

FYI - beefalo = hybrid between bison and domestic cattle

Beef and buffalo taste pretty darned similar, so much so that depending on the cut of meat and the preparation, sometimes it would be next to impossible to tell the difference.

I've had beefalo burgers, and it's not much different than a good buffalo or beef burger. I haven't seen any in quite a while though, probably because there are bison ranches nearby that sell meat locally, so that's more available.

The reason they crossbreed them is that bison are really mean critters. And when one of those things decides to charge, you'd better be able to hop over a sturdy fence. The crossbreeds are a little easier to handle. And I think originally, it was thought that people might accept something called beefalo before they'd accept bison/buffalo.

We get ground beefalo from a local farm store and have used it to make meatballs and burgers...I think it has a little bit of a deeper taste to it.

I haven't tried a blend of the two (w/ beef) but I can see why someone would: It should obviously add additional moisture because bison is very lean

@alm25 - I get your "deeper" description; it definitly tastes different than beef regardless of how lean it is. We grow/raise Bison like Crazy here in Central Canada

i haven't, but i bet it would be good-i already like mixing up pork, beef, and veal for a deeper flavor in meatballs/loaves. doubt i'll be coming across them i ohio anytime soon tho, but i'll keep my eye out for them.

Never had beefalo, but a good bison burger is awesome. I live in TX where beef is king, but I find bison to be a better, slightly sweeter tasting meat. Although a tad pricey, if you are really health conscious, then it may be a better choice.

I've judged a buffalo meat cooking contest and the problem most people have is that they don't know how to cook it. It is so lean that it is easy to overcook. Over cooked can be anything past medium rare. Beefalo may have a bit more fat which will help keep the meat juicy and allow a bit more leeway in cooking. Not a bad thing for most cooks.

I've been tempted, but I look at the price and opt for regular beef.

I've never had beefalo, but I made buffalo burgers the other night in the broiler. I put them on foil and they stayed pretty juicy (we also eat our burgers medium-rare). It is more expensive but then we justify it by remembering that buffalo has less fat and cholesterol than beef plus we rarely eat red meat anyway so we might as well get the good stuff.

The burgers were awesome. I think that buffalo doesn't taste as greasy as beef and has a meatier flavor (if that even makes sense).

We made our burgers with sauteed mushrooms and blue cheese.
