which cheeses pair well w/various types of salumi
For dinner tonight I will probably go with a nice creamy burrata but any other suggestions are welcome. dinner will probably be a type salami, a prosciutto and mortadella plus a bread and maybe caponata.

This is my favorite dinner for warm summer evenings when it's too hot to cook! I think the creamy textures and rich flavors of soft-ripened cheeses and surface-ripened cheeses go well with smoked meats - especially with the spice in salami. I'd suggest a Fromager d'Affinois and a St. Marcellin or La Tur.

I do a little hard and a little soft like a little block of parmesan reggiano, pecorino, provolone, maybe some goat cheese, mozzarela or some waxed cheese.

I'm a dried meat and salami addict!
My favourite salami is the gypsi one with all the whole pepprecorns and chilis on the outside omg awesome
I like to eat my salami sandwiches with swiss, brie, camembert or an imported cream cheese like boursin. Actually bousin with the garlic and some Schärfesenf (sp?)

I'm a sharp provolone girl...I love the salty tang that makes my saliva glands get excited, with the silky smoky meats. And a crusty bread. and a tomato & basil salad with a dash of good vinegar and some olive oil. throw in a couple of pepperoncinis too. When's dinner???
