Too much watermelon!!

We had a bbq yesterday but were so stuffed with all the other food, I didn't even get a chance to bring out the huge watermelon that I bought.

I sliced some up today, which we snacked on. I don't know how many more watermelon cubes we can eat though. I wanted to make agua fresca but I read you really need to use seedless melon and I don' t have the patience to pick out all the seeds of this big guy.

Any great ideas?

There's no such thing as too much watermelon!

Take some to work to share. Send some along with the other half of "we" too. (or neighbors as mentioned above)

Invite some friends from the bbq to return for a left over party and serve the watermelon again. Jazz it up with a little liquer and some fresh mint for a special touch.

Make a watermelon salad with jicama, red onion, lime juice and cilantro.

Make the agua fresca. It's worth the test of patience. Most recipes require you to remove the seeds anyway.

Make pickles with the rind.

I bet you can make a mean sangria with some of that!

Pick out the black seeds, (don't bother with the little soft white ones), cube it up, and toss it in the blender with some ice, fresh mint, and vodka, rum, or tequila. If you have some other fresh fruit, throw that in too. If you have frozen fruit, use it instead of ice. Grab a good book, find a comfy chair outside, and have a delightful afternoon.

Sorbet or granita would be yummy, too. Or juice some and make watermelon lemonade. Freeze some cubes and use them instead of ice to jazz up sparkling water or juice.

Aside from agua fresca, my favorite uses for watermelon are salsas, sorbets, fruit salads, cocktails and granitas. An easy solution is to fill it with vodka (and something sweet if the watermelon isn't sweet enough), chill, and enjoy.

Can you freeze cubes of it? I think a little watermelon-sicle would be awesome on a hot day.

Watermelon Sorbet... or you can throw it in the blender and make juice out of it to mix w/ others or drink on it's own.

@ProfessorChaos--I like where your head's at. And I second the granita as well. Last summer when I was preggers and couldn't have a cold beer, watermelon granita was the next best thing.

CUCUMBER-WATERMELON SOUP

Ingredients
1/4 cup water
2 tablespoons raw sugar
1/4 cup fresh lime juice
7 cups peeled seedless watermelon, ½ inch chunks
2 cups finely diced cucumbers (english)
small pinch of kosher or sea salt

Directions

1 Combine water and sugar in a saucepan.
2 Bring to boil over medium high heat; stir in lime juice.
3 Cool then chill.
4 Working in batches, place watermelon in blender or food processor, cover and blend until smooth.
5 Spoon off foam, if desired.
6 Stir diced cucumber, and lime mixture into watermelon purée.
7 Cover and refrigerate until cold.
8 Taste and adjust seasoning if necessary.

I keep seeing recipes for watermelon/tomato salad - I know epicurious has one under their seasonal dishes section right now that I've been dying to try (unfortunately every time I get watermelon I just guzzle it down. I blame my mother: the summer she was heavily pregnant with me she ate at least 1/2 a watermelon a day!)

Watermelon margaritas.

my mother always had watermellon all cubed up, all seeded, all summer. Its amazing, i could eat an entire mellon. just seed that sucker, its way worth it.

You can make a watermelon slush or a watermelon sorbet or...add mint and ginger to make a watermelon salad (kind of like eating watermelon as is though). Here is a slush recipe:

Ingredients

1 C. water
2 C. chopped watermelon
2 Tbs. sugar
1 Tbs. lemon juice

Directions

Cut watermelon into 1-inch cubes. In a blender combine water, watermelon, sugar, and lemon juice and ice until smooth. Garnish with small watermelon wedge and a slice of lemon.
