Sorry, I wish I could be of more help, but honestly I've never eaten from a food truck in SF. Here's most of the info I could find:
Serious Eats just had a post about a creme brulee cart in the Mission District (they also mention a magic curry cart-magic curry!)
http://www.seriouseats.com/2009/05/creme-brulee-cart-man-san-francisco-bay-area-dolores-park-ca.html
I have also heard good reviews of a Belgian Waffle truck at the Civic Center Farmer's Market (I think they may be on Wednesdays): http://chowhound.chow.com/topics/458178
Mission Street Food used to be in a truck before it moved to a more permanent location: http://blog.missionstreetfood.com/
You might also try doing a search on the SF boards on Chowhound. I think I remember seeing some threads about food trucks, but some may be outside of SF proper.
Good Luck! Hopefully, others have a better suggestions :)

I don't really know any food trucks either in SF-- I live in the downtown area so there really isnt a lot of space, but I think most trucks are down by the Mission area.
I agree with all the stuff caroliiine said before me (It's gonna be my mission in the summer to locate Creme Brulee cart!). The Civic Center Farmer's market also has a tamale truck which I heard is really good (i havent tried it because the lines were always really long when I go to the market)
The Ferry Building Farmer's Market is on Saturday mornings and there's usually some food trucks there. I think there's a rotisserie truck.
El Tonayense was reviewed on Check, Please! Bay Area and it got good reviews: http://blogs.kqed.org/food/2008/04/04/el-tonayense-reviews/
There's also the Tamale Lady in the Misson and the Bacon-hot dog man. Yelp.com is really good for looking up restaurants, there may be a sub category for carts.

Hi Ed,
The creme brulee cart is one of the most fun and inventive, as is the Curry Cart. Both are worth checking out.
We have several really fantastic Mexican food trucks that go way beyond the expected. In addition to the usual offerings, there is one that serves only homemade tamales (that are awesome).
Sketch Gelato in Berkeley also has a gelato cart that is pretty great too.
