quiche making suggestions
I'm going to bake a quiche tomorrow and I'm planning on using asparagus and tomato. I want a third vegetable, preferably something in season, but I can't decide on one. Any suggestions?

Fresh raw peas perhaps or some green onions are the first things that come to mind. Both would be awesome with asparagus and tomato. You could also add some smoked salmon or bacon or ham for additional flavor.

Is this all going into the same quiche? If so, how about shallots or caramelized onions? I think for the asparagus especially the shallots would be a lovely compliment. Perhaps not the "vegetable" you had in mind, but I would keep it simple to concentrate on the flavors you already have.

i'd keep it simple, too, asparagus is really the star of the show..... why not some chopped parsley stirred into the egg mixture for just a little more color.

Mushrooms would be good. Frankly, if it were I, I'd skip the tomato, though--too much soggifying potential. How about asparagus, mushrooms, onions or shallots, and fresh thyme?

I also was thinking that I'd ditch the tomato - unless I was going to salt and oven-dry them a little bit to get rid of the excessive moisture and then cut them small to use almost in the same way as herbs, for a punch of flavor. Other than that, I thought of spring onions/scallions for that green punch (also I love oniony flavors). Good luck!

i'd drop the tomato too...mushrooms and onions are great suggestions-and i like putting spinach into quiche.
(i'd also huck some sausage in there, but it sounds like you're trying for a total veggie version.)
i actually mentioned it already in the 'apple pie way-no way' talk post, but my mom always incorporates some shredded cheddar into the crust & it makes it soooo tasty.

I personally love mushrooms in quiche so I'd go with that or spinach!

I second spinach! One of my friends made a spinach, tomato and artichoke quiche a few months back and it was awesome.

leeks, roasted garlic, arugula.
i like little cherry tomatoes. they don't leak as much juice into the quiche.

Ditto on the sogginess of the tomatoes--sun-dried, perhaps? I don't like to use more than two different veggies in my quiche, as it seems a little too busy to me, but I think some carmelized onions would be a nice compliment.
My fave combos: spinach and artichoke hearts with a mix of cheddar and monterey jack, and blanched asparagus and smoked salmon with gruyere and jack.

I made a veggie quiche recently with veggies I had in the fridge and used oven roasted grape tomatoes that really made the quiche stand out. Carrots, broccoli, green onions, asparagus, mushrooms, you can put anything in there. As dharmon referred to it...it was a "fridge dump" quiche and it was great!
