What to do with Wheatgrass?

I have a beautiful terrarium from Smith and Hawken and (probably due to my forgetfulness to water plants) have been unsuccessful in growing even a cactus in it. I heard that wheatgrass is easy to grow, and healthy for you - an added bonus. So...I went to S&H and bought a can of seeds, sprinkled it over organic soil, and two weeks later I have a terrarium full of 8 inch wheatgrass! I want to use it for the health benefits, but the question is - HOW do I use it?

Any suggestions?
