Making Crackers

My girlfriend and I just got back from a cheese festival in seattle and needless to say - we have tons of cheese now.

So we are putting together a nice wine & cheese party.

She wants to make crackers... any yummy recipes and/or tips?

Any other suggestions as well, like meats & patés.
