Local Food Hor D'Oeuvres

Hi, I'm hosting a tasting of local food from NY and will be making several hors d'oeuvres that each spotlight a different food (ie: asparagus, honey, goat cheese, rhubarb etc.) I was thinking of doing a few different toppings to put on toasts but I could use some more ideas maybe a drink or dessert?. Whatever I make has to travel well and be eaten cold (I won't have any heating access unfortunately). Any help would be much appreciated. Thanks guys!

New York City or New York State? Just wondering...

For drink - long island ice tea or a manhattan, even apple cider, perhaps??
For dessert - apple pie? Rachael Ray always says she lives in upstate NY in apple-picking country...


arugula is coming in now, you can make an arugula pesto to put on your toasts.....

a cheese board...you could use local jams, local cheeses...dressed greens are always nice, whether on their own or on toasts. Without knowing what other specific foods you're going to be highlighting it's hard to give specific ideas.

there are small batch bourbons made in NY state, also fabulous local beer (Brooklyn, Six Points, etc), wine and vodka from the North Fork of L.I., and wine from the Fingerlakes regions. Cheese from upstate, Ronnybrook dairy / Old Chatham Sheepherding/Coach Goat, just to name a few purveyors. I'm sure there are also locally cured meats. I'd check your farmer's market or a proudly local specialty store (like Marlow and Daughters in W-burg) for ingredients and ideas.

There are places in the Fingerlakes that make grape pies out of wine grapes. Not sure how you can get your hands on some of those, but how yummy would grape handpies be? There are strawberry patches upstate as well, so you could easily do a fruit salad with some fresh basil or mint. Simple but the ingredients speak for themselves?

Don't forget the Saratoga mineral water.

Here's a link to some rhubarb compotes, relishes, and chutneys, which might be an interesting way to present rhubarb instead of as a dessert.
