Home Cheese Maker and Bread Baker Looking For Like-Minded Adventurers in gastronomic experiments.
I've been making cheese at home in my Brooklyn apartment for a few months and it's gone incredibly well. I've also been making my own sourdough.

that sounds great, what kind of cheese have you made?

i just tried my hand at feta, i think i messed it up, though.... it kind of melted in the brine... i used cow's milk from the local dairy.... (upstate ny) any tips?

would love to find out more about the cheeses.

bread i've done in the past.... nothing like freshly baked bread.

@cheeseman--I will be checking out your site. No experiences yet...but who knows what a bit of inspiration may result in.

@pooch--sorry to hear that your feta results were not what you wanted. Experimenting can be fun though. Are you documenting the steps you're taking with photos and notes? If so, that can be helpful when other people are trying to help out...AND...
Some elementary schools and middle schools love it when they have some one who is making a food--cheese in this case--and shows some of the science behind it, mis-steps and all. It gives the kids to see a process that may or may not result in the optimal result...and to just keep trying. Also, since you're getting your milk from a local dairy, it gives them a chance to think about from the land/animal to the table vs. store to table.
And just how are your doggies? Miss Ellie has been rolling in the freshly mown grass and has some rather vibrant green patches in that that golden coat (tie dye?). It's hose and bath time!

@cheeseman haven't checked out your blog yet, but do you ship your cheeses?

@dhorst - hey lady, glad to hear miss ellie is having a "spring fling".... my guys are also. they just got clipped down for the warmer weather.... they just love rolling in the dust!

yeah, my feta! anyway .... better luck next time, i think i'm g oing to stick to the fresh cheese (what i got before brining) that i can fold some fresh herbs into.... the brining is tricky. you should give it a try, though, it was so simple to do... good idea about showing the kids.... when i get it down better, maybe.... i tried teaching my nephew and stepdaughter.... we'll see if it sparks any interest. well, you take care, enjoy the lilacs.... ours are popped out, yours must be also....

@ cheeseman I am having trouble getting to blog as well.

I suspect cheeseman has left the building. Maybe I'm wrong, but this one seems like one of those drive-by posting to get us to his site to chat there, rather than a jumping-off point for chatting here.

@pooch - cheesemaking is experimental. There are a lot of reasons your feta crumbled. You might not have pressed it enough or you might not have let the curd form enough. I had the same experience with making Haloumi cheese and I tried again and it worked. It's just practice. No use crying over "spilled milk."
